David Stewart MBE uses whiskey that has spent at least 12 years in conventional whisky casks, American oak ex-bourbon barrels, and hogsheads to soften the maturing spirit and provide warming nuances of vanilla spiciness to The Balvenie DoubleWood 12 Year Old. He then ages it for another nine months in Spanish oak ex-Oloroso sherry barrels to enhance complexity, giving in a Single Malt with fruity, honeyed undertones. After that, the whiskey is moved to big oak containers known as tuns for 3-4 months to allow the whiskies to mingle. This is a great way to start your collection of aged whiskies, and it would also make a great present for a loved one.
